INTL 3125. Food and Globalization. (3) Cross-listed as ANTH 3125. This course explores the relationship of the modern food system to larger complex economic, political, and cultural processes. It considers how increasing global interaction and interdependence has transformed how we grow, distribute, and consume food. Specific topics include the development of the agro-industrial complex; the formation of new food preferences, eating practices, and taste publics; and, the emergence of alternative fair trade, organic, local, and slow food movements.
